オリジナルグラスOriginal Glass: 250ml Tuilip Glassランビック・ビールは、フェダーと呼ばれるオークの樽で熟成させた自然発酵のビールです。グースは、熟成させた期間やフェダーがさまざまなランビック・ビールをブレンドしたものです。
カンティヨン・グースは5〜6種類のランビックがブレンドされていて、ボトルの中で、成熟した(3年以上寝かせた)ランビックは味と香りを、若いもの(1〜2年寝かせた)は適度な炭酸をもたらし、二次発酵を誘発します。
瓶詰め後、ビールは冷蔵室で水平に保管され、さらに1年間熟成させます。これによって、炭酸が心地よい爽やかなグースになります。
キレがよく、飲みごたえがありドライですが、驚くほどフルーティーで香りの良いカンティヨン・グースは、多くのビール愛好家にサワービールの絶対的な基準とされています。
ですが、発酵プロセスを完全に監視することは出来ないので、醸造所はそれぞれのバッチが少しずつ違う味になる、としています。
ラベルには、100%バイオによることを表すバラが描かれています。
おしっこをする小さな男の子は、ランビックとグース・ビールの発祥地であるブリュッセル市のマスコット、小便小僧です。
Lambic beer is spontaneous fermented beer aged in oak casks called “foeders”. Gueuze is the blending of Lambic beers of different ages and different foeders.
Cantillon Gueuze is made from 5 to 6 different Lambic beers, with the mature ones (Lambic of three years or older) providing taste and aroma and the young ones (Lambic of 1 to 2 years old) providing the necessary spark to induce refermentation in the bottle.
After bottling, the beers are stored horizontally in cool cellars to age for another year. After this, the flat Lambic beer will have become a sparkling and refreshing Gueuze!
Piercing sharp and bone dry but surprisingly fruity and aromatic, Cantillon Gueuze is considered by many beer lovers as the absolute reference for sour beers.
That being said, the brewery warns that every batch will have a slightly different taste, as it is impossible to completely monitor the fermentation processes.
The label depicts a rose which represents the 100% bio character of the beer, while the little peeing boy represents Manneken Pis, the mascot of the city of Brussels and the cradle of the Lambic and Gueuze beers.
